Tip from Rineke:

Everyone can consume their daily portions of fruit and vegetables without having to spend too much time in the kitchen. Many of our essential vitamins are lost when foods are cooked. Vitamin Bs in particular are extremely important for our brain and optimal energy levels but are lost as a result of light, oxygen and heating. So make a habit of regularly eating raw vegetables as well. A smoothie (if you vary the fruit and vegetables) is a perfect daily supplement. Especially for those days when you eat away from home or have little time to spare on meals. Don't forget to add lemon juice and buttermilk to spinach or vegetables rich in nitrates. This counteracts the nitrites and oxalic acid. There are quite a lot of warnings about nitrites, though they also have beneficial properties. They actually cause vasodilation and therefore help combat high blood pressure. Organic and field cultivated vegetables contain less nitrates.
