Sous l&rsquo;influence des Maures, les Paella van Vallencia \u00e9taient faites avec du safran. D&rsquo;autres plats de riz \u00e9taient pr\u00e9par\u00e9s avec du safran pour la couleur et l&rsquo;odeur. (Secrets of Saffron, la vie vagabonde de l&rsquo;\u00e9pice la plus s\u00e9duisante du monde, Pat Willard, p. 73)<\/p>\n\n<h2 class=\"wp-block-heading\">Le safran dans la cuisine espagnole<\/h2>\n\n<p>Le safran est \u00e9galement utilis\u00e9 dans les plats espagnols, le Fabado Asturiana (soupe de haricots traditionnelle des Asturies) et le Pot Gallego (soupe-repas de Galice). Les albondigas al azafran, boulettes de viande au safran de La Mancha, sont de merveilleuses tapas avec une boisson, tout comme la tortilla espanola de azafran, une omelette de pommes de terre au safran. Et la Sopa de cebolla con azafran, une soupe \u00e0 l&rsquo;oignon particuli\u00e8rement savoureuse avec du safran, des amandes et du x\u00e9r\u00e8s ou le Montadito de centolla con azafran, un petit pain aux crabes et au safran. Le Mojo picron Canario, une sauce aux poireaux \u00e9pic\u00e9e de la cuisine canarienne, est souvent consomm\u00e9 avec des pommes de terre et les mejillones al azafran, des moules au safran, sont un classique de la cuisine espagnole, tout comme l&rsquo;arroz con azafran (bouillie de riz au safran). Il y a aussi les Gazpachos Manchegos, une cocotte au lapin et au safran de La Mancha et la Zarzuela de pescado, une po\u00eale de poisson traditionnelle espagnole au safran. A Teruel, en Espagne, la cr\u00e8me brul\u00e9e au safran est c\u00e9l\u00e8bre. <\/p>\n\n<h2 class=\"wp-block-heading\">Le safran dans la cuisine du monde<\/h2>\n\n<p>Dans la cuisine argentine et uruguayenne, on conna\u00eet le Chimichurri de azafran, une sauce et marinade au safran. Dans le nord de l&rsquo;Italie et de la Suisse, le safran est utilis\u00e9 pour le risotto. Le safran peut \u00eatre ajout\u00e9 aux g\u00e2teaux&#8230; il est merveilleux dans un g\u00e2teau au citron vert ou au citron ou dans un g\u00e2teau au safran de Cornouailles, bas\u00e9 sur une recette de Mme Lena Thomas de 1971. En Inde, le safran se retrouve dans de nombreux plats : dans le riz, les nouilles au safran, dans les confiseries, les desserts et les glaces. L&rsquo;Inde utilise le safran dans l&rsquo;Ayurveda et les rituels religieux. En Arabie saoudite, le vrai caf\u00e9 arabe est fait avec du safran et de la cardamome.<\/p>\n\n<h2 class=\"wp-block-heading\">F\u00eate de la rosa del azafran<\/h2>\n\n<p>Le dernier week-end de la r\u00e9colte du safran, une grande f\u00eate du safran, la \u00abFiesta de la rosa del azafran\u00bb, est c\u00e9l\u00e9br\u00e9e \u00e0 Teruel, en Espagne. La date change chaque ann\u00e9e. Le festival a g\u00e9n\u00e9ralement lieu le dernier week-end d&rsquo;octobre. Le premier festival a \u00e9t\u00e9 c\u00e9l\u00e9br\u00e9 en 1963. De l&rsquo;entr\u00e9e au dessert, tous les plats sont pr\u00e9par\u00e9s avec du safran : des plats aux \u0153ufs au safran aux desserts au safran.<\/p>\n\n<h2 class=\"wp-block-heading\">Astuce pour plus de go\u00fbt, de couleur et de parfum avec le safran<\/h2>\n\n<p>Le safran est soluble dans l&rsquo;eau. Les fils de safran doivent de pr\u00e9f\u00e9rence \u00eatre broy\u00e9s directement puis tremp\u00e9s dans un liquide (eau, lait, th\u00e9, etc.) pendant 5 \u00e0 30 minutes afin de pouvoir d\u00e9gager suffisamment de parfum, de go\u00fbt et de couleur. L&rsquo;alcool et toute solution alcaline sont \u00e9galement tr\u00e8s appropri\u00e9s pour laisser s&rsquo;exprimer l&rsquo;odeur, la couleur et le go\u00fbt du safran.
