Le safran a \u00e9t\u00e9 introduit sur la p\u00e9ninsule ib\u00e9rique il y a plus de 1000 ans, par les Arabes d\u2019Afrique du Nord. Jiloca est situ\u00e9e dans la province de Teruel, \u00e0 mi-chemin entre Madrid et Barcelone ; c\u2019\u00e9tait une r\u00e9gion pr\u00e9destin\u00e9e pour la culture de l\u2019oro de los pobros (l\u2019or des pauvres), comme on appelle le safran dans la r\u00e9gion. Le safran Jiloca pousse \u00e0 une altitude de 700 \u00e0 900 m\u00e8tres. Les hivers froids et courts et les \u00e9t\u00e9s longs de Jiloca livrent probablement le meilleur safran au monde.<\/p>\n\n<p><strong>Le safran biologique d\u2018Amanprana provient de Jiloca.<\/strong> En organisant des d\u00e9gustations dans la r\u00e9gion, Slow Food et le mus\u00e9e du safran tentent de promouvoir l\u2019h\u00e9ritage de Jiloca. Le safran d\u2019Amanprana, produit \u00e0 Jiloca, est certifi\u00e9 bio et fabriqu\u00e9 avec les fleurs de la meilleure qualit\u00e9 r\u00e9colt\u00e9e par le cultivateur. Le safran Amanprana poss\u00e8de \u00e9galement le label \u00ab Artesania Alimentaria \u00bb qui figure sur les aliments artisanaux, fabriqu\u00e9s \u00e0 la main.<\/p>\n\n<h2 class=\"wp-block-heading\">Slow Food et safran Amanprana de la safrani\u00e8re Jiloca<\/h2>\n\n<p>Le mouvement slow food est n\u00e9 en 1989 en Italie. L\u00b4initiateur du mouvement, Carlo Petrini, avait pour ambition de devenir un rempart contre le fast food et l\u00b4existence acc\u00e9l\u00e9r\u00e9e. Il voulait \u00e9viter que les produits locaux et artisanaux aient \u00e0 c\u00e9der la place aux grosses entreprises affichant des processus de production industriels. Jos\u00e9 Mar\u00eda, qui cultive le safran pour Amanprana, opte d\u00e9lib\u00e9r\u00e9ment pour le slowfood, principe selon lequel la qualit\u00e9 prime sur la quantit\u00e9. Gr\u00e2ce \u00e0 la qualit\u00e9 d\u00b4excellence et la production \u00e0 petite \u00e9chelle, Slowfood a propos\u00e9 de baptiser ce safran \u00ab baluarte \u00bb (qui signifie bastion, pilier, en espagnol).
